Shopping for chili peppers in Ireland eleven years ago was an adventure, avocados were an oddity and tortillas were totally out of the question. Strapped for ingredients and homesick for Mexican Food made me very resourceful, or perhaps you want to call it desperate? So over the years I learned to use some of the fantastic produce found in Ireland as a substitute for the Mexican ingredients I couldn't find here; it gave birth to what we call 'Irish-Mex' cuisine.
In this section, we are gathering as many of those ingredients and produce as we can. Some of them are far superior to what I would use in Mexico, so we are very happy to share them with you. Happy Cooking!
