Mexicans produce and consume an enormous amount of chilies. Many are dried as it is a good way to preserve them and extend their life. All dried chilies started life as a fresh variety that, when dried, got its name changed. Traditionally used in moles and pipianes, these dried chilies have crept into all sorts of salsas. My Mexican Shop is run by husband and wife team, Lily & Alan. He is Irish and she is Mexican and they met in Japan over 15 years ago. Lily has been living and cooking in Ireland for over 10 years now.
