Mole (pronounced Mo-lai, as in the soccer song ole, ole, ole, ole), is a Mexican sauce, dark in colour and made of chocolate, spices, chilies and seeds. It is the Mexican answer to curry and is a very traditional dish in Mexico, eaten all over the country. The most popular moles are made in the state of Puebla in central Mexico, although the ones made in the state of Oaxaca, in the South of Mexico, are very popular too. They are served with turkey or chicken and as sauce for enchiladas and tacos.
